ANZAC Biscuits

Summary
A delicious sweet biscuit made from butter, sugar, oats, and desiccated coconut. A favourite in Australia and New Zealand.
Ingredients
- 120 g (4.2 oz) butter
- 100 g (3.5 oz) golden syrup (corn syrup or honey work too)
- 1 tsp bicarb soda
- 100 g (3.5 oz) rolled oats
- 150 g (5.3 oz) plain flour
- 70 g (2.5 oz) brown sugar
- 50 g (1.8 oz) desiccated coconut
Directions
- Preheat oven to 160 °C (320 °F).
- Line a baking tray with baking paper. Set aside.
- Combine butter and golden syrup and melt over medium heat. Stir to combine thoroughly.
- Stir in bicarb soda and blend completely.
- In a mixing bowl, combine oats, flour, brown sugar, and desiccated coconut.
- Stir dry and wet ingredients together with a wooden spoon, or with your hands.
- Take a heaped tablespoon of the mixture, roll it into a ball, and flatten gently with three fingers.
- Place on the baking tray, leaving ~1–2 finger widths between each one.
- Bake for 8–10 minutes, or until golden brown (check at 8 minutes so they don’t overcook).
- Cool for 2 minutes on the tray, then transfer to wire racks to cool completely.
